Pumpkin Bread

Red and yellow, gold and brown -
leaves are falling down, down down...

and it's also pumpkin season.
Here's my pumpkin bread recipe.

2 1/3 cups unbleached flour
1 cup whole wheat flour
4 teaspoons pumpkin pie spice
2 teaspoons soda
1 1/2 teaspoons salt
1 teaspoon baking powder

2 1/4 cups sugar
2/3 cup oil
4 eggs
2 cups pumpkin
2/3 cup water
3/4 cup chopped walnuts

Grease loaf pan.  Sift together dry ingredients.  
Add wet ingredients until well blended.  Stir in walnuts.

Bake at 325 for 75+ minutes.
Two times the recipe will make 5 loaves, 
using 2 1/2 cups dough per loaf.

To make pumpkin pie spice:
1/4 cup cinnamon
1/4 ginger
1 tablespoon nutmeg
1 teaspoon cloves
