Read a post this morning mentioning how Christmas Cookies make memories. Here's the recipe I made for many years. Although haven't made in a decade, I still get requests. Apparantly made memories. One young man liked the snowman cookies the best. Perhaps because decorated with 5 m&m's or cho chips. In truth, the tree cookies had 6 m&m's.
Vanilla Cutout Cookies
In mixing bowl: splash vanilla
1 cup sugar
1 stick margarine (Blue Bonnet) or butter
1 teaspoon baking powder
1/4 teaspoon salt
Cream together.
Blend in: 1 egg
Mix in just until 2 1/4 cups flour (Gold Metal unbleached)
incorporated: 1/3 cup milk (2%)
Do not over mix. Refrigerate dough overnight.
On well-floured surface, with well-floured cutters, cut out shapes.
Place on greased, or parchment paper covered, baking sheets.
Bake at 325 until lightly browned.
Makes about 27.
Vanilla Frosting
4 1/2 cups confectioners' sugar
1 cup shortening
1/4 cup butter
1/2 cup milk (whole or 2%)
splash vanilla
Beat 7 mintues with heavy-duty mixer.
Chocolate Frosting
To above ingredients, add:
2/3 cup cocoa powder
3 or more Tablespoons milk
Beat 7 minutes with heavy-duty mixer.
