What to make when the garden overflows these cool days and nights?
Vegetable Medley
Saute diced onions, peppers, garlic, and sliced polish sausage in olive oil.
Add diced cabbage, zucchini and/or eggplant, tomatoes.
Simmer.
Season with salt, pepper, basil.
Lunch is served.
